MARTIN MAKOVIČKA

I am the founder and owner.

Dad, partner and dancer at the same time. I create mainly from the heart. Everything I do is actually a kind of dance - spinning around my family and in the kitchen gives me great fulfillment. What I enjoy most about gastronomy is working with people. I think that's exactly what it's about. 

After the experience of my first part-tome job in Třeboň, I set out to search in the Czech Republic and abroad what honest gastronomy actually means, what aspects it carries and what significance in everyday life the experience of combining quality ingredients with good processing and service has.

But I already have a foundation from my parents, who took us to restaurants from childhood. They taught us the culture of dining and catering, cultivated in us inner and outer attention, while abroad they indulged us in local cuisine and traditions. These values ​​and perceptions left a deep impression on me. I live by gastronomy. Outside of my restaurant, I am most often back at the restaurant. As an educator, cook, or boarder. I promote the philosophy that the choice of food that we take in is an integral part of taking care of our physical and mental health, and I would like to recommend it to everyone. I also try to take care of myself. In addition to managing Vallmo, I travel between businesses and organize tasting evenings, always taking into account the character of a specific place, the season, the possibilities of choosing ingredients.

I help start up interesting businesses with potential, set up their concepts and menus. I also train teams, chefs, cooks, I would like to continue in schools as well. My intention is to improve gastronomy in the Czech Republic so that cooking is better (honestly, naturally, lightly) and the value of proper dining is developed in the sense of a healthy lifestyle and a social event. I try to naturally and wholeheartedly convey my belief in how enriching and healing the sensory experience of food can be, if it is served sensitively and with due care.

At Vallmo, we try to satisfy all five senses so that you feel nourished and cared about you.

RESTAURANT

Traditional-non-traditional cuisine, sensitively working with the products of our country.

Our aim is to set the direction of Czech gastronomy and improve its level. Simple and natural processing of traditional raw materials in the highest quality is essential for us. Seasonal and local offers in imaginative combinations and direct context.

We choose our local suppliers with care. They are honest and warm people whom we trust, they are engaged in cultivation or breeding in the highest quality.

We try to follow the procedures of our ancestors who knew how to work with raw materials. They knew that everything makes more sense in modesty, and eating according to the seasons will further support this.

As part of a first-class service, we want to provide you with direct contact with the raw material and the transparency of our work with it. So that you can touch its essence and feel the full experience through your senses.
